Don't specifically have that experience, but I imagine it would be trivial to write (given some basic knowledge of Objective-C and iOS, in the iPad/iPod/iPhone case). iOS uses a SQLite database behind the scenes that you could easily store the information in and eventually update a SQL database somewhere else with if that's your intent.

Not exactly sure how you'd do BP, HR, and resp rate on the same graph though - they don't have identical scales or deviations. Would you have a scale that changed based on which symbol was selected? Do you intend to have the x-axis be time, and have multiple plots of each value, or do you intend to have one of the values be the x-axis itself?
