There is no way to literally hide variables in a data file in your disk. However, for any SPSS session you can choose the variables you want in your working file. Look at the GET FILE command in the Base System syntax. Of course, other variables are not just hidden: they aren't included in your working file in that session. Old cautionary advice: if you do load a working file with only part of your datafile variables, please don't save the working file with the same filename: you'd lose all the other variables!
