Jim,
 
There are lots of ways to give map related homework. Just to list a few:
1. Map scale
 a) assignment on making different scale such as graphic scale, RF scale or
statement scale.
 b) assignment on how to convert map scale from one unit to another.
 c) If you have access to map scale converter. You can give assignment to
how to use it and also     how to convert graphic scale into RF scale or
latitude and longitude into RF scale.
2. Map projection
 a) assignment on how to create graphical projections.
 b) different between a few of the popular projections such as UTM v/s
State Plane and their             properties and zones.
3. Reading topographic map
 a)measuring stream length
 b)how to draw cross-section or how to draw profiles
 c)identifying different relief features
 d)assignment on how to read geographic north, magnetic north, and their
declination.
4. Statistical mapping
 a) assignment on creating cartogram
 b) how to draw map with bar graphs
 c) choropleth mapping etc.
5. Map cataloging.
 a) atlas  v/s map cataloging
 b) different between road map and tourist map etc.
 c) defination of different cartographic terms to understand map cataloging
6. How to identify different maps produced by different agencies in the
United States for example,        difference between 1:100,000 USGS
topographic v/s Planimetric v/s 1:100,000 BLM maps etc.
