Seems a bit odd to reject Mercator for distortion and then propose
Plate Carrée as a better solution.  My understanding is that sites
like National Geographic's Map Machine use Plate Carrée ONLY because
the demand from an incredibly large number of users would otherwise
overwhelm the available computing power.

If you're asking "what map projection should I choose to display a
single world map image to a modest number of users?" then I would
recommend Robinson.  Remember that Robinson can be centered on any
meridian.  Given your subject matter, you may want to choose one that
has the Pacific Rim in the center and puts the Atlantic at the edges.
