For starters:
 
The series "Geologic Map index of [state]" published by USGS.
Includes a graphic index of the state plus an accompanying
bibliography.  Mostly from journal articles or in various
monographic series.
 
"Index to Maps in Books and Periodicals"  One of those
oversized multi-volume indexes published in the 60s by G.K.
Hall, where they reproduced the card catalog cards from an index
put together by AGS.  There's at least one supplement volume
since the original 1968 set.
 
"Index to Maps in Earth Science Publications, 1963-1983" by John
van Balen, published by Greenwood.

Dear Crystal Chisholm,
 
The actual Map Catalog in the AGS Collection contains bibliographic
entries for maps in books and periodicals.  This portion of the
catalog was published by the Map Department, American Geographical
Society in 1968 as: INDEX TO MAPS IN BOOKS AND PERIODICALS (Boston:
G.K. Hall, 1968). 10 volumes (over 164,000 entries!).  The First
Supplement was published in 1971 (over 12,600 entries) . The Second
Supplement was published in 1976 (over 12,000 entries). The Third
Supplement was published by the American Geographical Society
Collection, Golda Meir Library, University of Wisconsin Milwaukee in
1987 (over 12,200 entries).  Cards are no longer added to the Map
Catalog, but maps are still indexed and added to Section Three of
CURRENT GEOGRAPHICAL PUBLICATIONS (ISSN 0011-3514).  See the AGS

A couple of titles that come to mind immediately are:
 
American Geographical Society.
Index to maps in  books and periodicals. 1968 + supplement(s)
10+ vols. (Large volumes)
 
Clark, David Sanders
Index to Maps of the American Revolution in books and periodicals
illustrating the Revolutionary War and other events of the period,
1783-1789.  Washington, 1989.
 
Kuchler, August Wilhelm
International bibliography of vegetation maps.  Lawrence, Univ. of Kansas
Libraries, 1965-70.
 
Additionally there is the
 
Current Geographical Publications / American Geographical Society, 1938-
which has a section of selected maps in books, journals, publications,
etc.  It is also available online at:
http://leardo.lib.uwm.edu/cgp/cgp.html
 
Others will have suggestions as well, I am sure but these are a few that
are available.
