You may get some better answers, but NOAA seems to call it RELIEF
(combined bathymetry and topography):

Can anyone help with this reference question?

What is the geological or geographical term used to describe the
combination of height and depth?

For example, the combination of the elevation of the Andes Mountains
along with the depth of the trench just west of the South American
continent create the greatest up-down distance on the planet.
