Elisabeth,

One of the best places to find more information about these (and other) elevation products is the Digital Elevation Data Catalog from Bruce Gittings at the Univ. of Edinburgh.  The URL is
   http://www.geo.ed.ac.uk/home/ded.html

Another worldwide product is GTOPO30 elevation data at
   http://edcwww.cr.usgs.gov/landdaac/gtopo30/gtopo30.html
but the resolution is also 1 kilometer.

Does anyone use  - or know anything about - these products, or
could suggest better quality products that show digital elevation
worldwide?

GLOBE (Global Land One-Kilometer Base Elevation) Version
1.0 - by NOAA has global DEMs

Map Render 3D - has world wide DEM coverage at 30 meter
resolution
