Hi Tony (and everyone), I'm not sure if you have the Esri Scholarship, but having students present their work for the scholarship is something we did at Brock University (St. Catharines, Ontario, Canada), while I was there. It was essentially a public presentation, with a panel of judges to later award the scholarship (or, advance the best one for Esri to award the scholarship). We also worked with the campus Geography society to have pizza and drinks, and the library contributed a GIS-themed cake. We also had some trivia, using Esri "swag" and other giveaways from on-campus partners like the bookstore as prizes. I hope that helps! What do other folks have planned?
