A variation on April's suggestion:
With a 300 that says 1 map on 3 sheets, have a formatted contents
note, 505 0, that gives contents of each sheet with the formal title
for each sheet that has one (such as the title of the main map for the
sheet that contains the main map), and for any sheets that lack formal
titles, make up a title (such as April's descriptions) and put them in
square brackets.
Another possibility:
Put 1 map in 300 subfield a, with the dimensions of that one main map
in subfield c, and have a subfield e for accompanying sheets, and a
general 500 note summarizing the contents of the accompanying sheets.
In either case, I am in agreement with April to catalog the main map
and just summarize the information about the other maps. I wonder if
geology librarians tend to feel that it's important to put emphasis on
the other maps as well.

sure everyone will have a different idea. Here's mine:

505/1 Contents: [Sheet 1] {title of map} - [sheet 2] X structural

Assuming, among other things, that sheets 2 and 3 couldn't stand
alone.
