Hi Emilio,
did you just eat ostrich steaks. They meat is very good and characterful, but I overgrilled
them a little bit too much. My mother doesn't like again quite bloody or rose, but I love it.
Next time I try it better.
Can you spare a few Liguus for the museum.

Hello!
Helmet, Here is recipe for the Ostrich steaks:
1 -use thin steaks aprox 10-15 mm
2 -dry with paper towel
3 -season with ginger powder, pepper and salt both sides
4 -dust with flour (very little) both sides
5 -saute steaks in butter and a tablespoon of olive oil, dont
overcook or they will be a bit chewy and dried out
6 -deglaze pan with a big shot of Felipe II (spanish brandy)
7 -add abit of heavy whipping cream to thicken the deglazing
liquid
after it has evaporated the alcohol
8 -pour sauce over the steaks and enjoy
Happy Mutti Day
Later,
Emilio Jorge Power
