How about this French dish...

"Lingots sal?s des Jardin!"
(Salted Garden Slugs)

...when salted live they come in their own
"Cr?me de boue sauce"

Serve:
?  Chilled and wrapped in wilted greens,
   with a Pinot-Blanc white wine.
?  Roasted with Dijon mustard,
   with a Demi-Sec Champagne.
?  Minced with garlic on a wheat cracker,
   with Bordeaux red wine.

This sounds simply dreadful!
.. but the French are known to have a much more varied pallet than us in the US.
After all they eat the Nutria (Myocastor Coypus)  ?Asian swamp rats?.
Which are imported form the Louisiana swamps.
