I have a set of articles on human-mollusk interaction, the author of which
I do not remember.  One potential hazard of eating large chitons and other
large grazers is that the radulas may be indigestible.  Eating too many may
produce the equivalent of a rather rough hairball, which is not good for
the tummy.
