The standard bugs for cleaning fish skeletons are dermestid beetles, which can be bought specifically for the purpose. Put them in a Tupperware box with some (small) holes in the lid and a bit of moistened cotton wool and they will clean the last morsels of flesh from anything. You might want to put them outside...
