Getting way off topic here, but...

Insects are very cool, but I have another suggestion for you, Ellen.
There are organisms that are much easier to collect than most marine
mollusks, and much, much easier to collect than most cephalopods (don't
I know it...).  Heck, they're even easier to collect than many insects.
  Furthermore, they're very diverse and common, yet woefully
understudied.  And the best part is, you could continue studying
mollusks.

I write this as a true fan of cephalopods who (for some reason...o.k.,
because there was a tenure-track position here) put down roots in the
woods of southern Illinois and needed a local study system:

How about land snails?
