Greetings Conchlanders,
If you like oysters but don't eat them raw anymore, try this Oyster-Artichoke
Soup. Even if you don't like oysters or artichokes this is quite tasty. It's
easy too. I learned this one in Louisiana, where you don't go to the
supermarket, you "make groceries."
 
Oh-Eh Soup;
Poach 2 dozen oysters in their own water, strain, keep the strained liquid on
the side. Saute 2 bunches of shallots (or green onions) in 1/2 lb. of butter.
Mmm. When the shallots are done add 5 tablespoons of flour. Stir constantly
for five minutes. Add oyster liquid and juice from a 14 oz. can of artichoke
hearts. Add H2O to make enough for 8-10 people. Add 2 bay leaves, salt and
white pepper to taste. SLOWLY bring to a boil. It is important to not let the
butter "break." Chop oysters and artichoke hearts and add them to the soup.
Cook a few more minutes and let's eat!
