I must support my good friend Gert Lindler, and for the very first time ever
disagree with Paul Monfils. Razor Clams are not only eaten here in the
North of Ireland, but they are considered a delicacy (by some - not me, so I
can't send you a recipe).
The Ensis siliqua (LINNAEUS 1758) are caught exactly as Gert describes - a
spoonful of salt and up they pop, usually in June of each year. Furthermore
experimental work is being carried out on the farming of Razor Clams with a
view of exporting them abroad..
