I can't answer the Alwyn question, but it brought to my mind that when I
was a posgraduate student, long time ago unfortunately, and works with
yeasts (trying to construct an intergeneric hybrid), we use an enzyme to
dissolve cellular walls -without damaging the cell itself- that was known
as helicase and was extracted from Helix pomatia (Suc d“Helix pomatia says
the boxes, wich came from France, of course)
