The liver (tomaly) of the scallop is considered a delicacy on the U.S. Gulf
Coast. In the 70's, the late Jenny Parsons demonstrated how to eat raw
scallops from Little Lagoon, Alabama. I didn't follow her example, but
regret it now that the scallop beds have become polluted.
