If you have the money, a refractometer does a wonderful job in a few
seconds and only requires one drop of water.  Basically, you place a drop
of water on a glass plate, hold the refractometer up and read the
salinity.  They are significantly more than a hydrometer (though I don't
know how much more), and are available at most educational and larger
scientific suppliers.
