Sorry to say, but scallop muscles just can't be duplicated by using
fish.  The grain runs the wrong way.  Only a person that has never eaten
scallops can be fooled.  Don't malign an area unless you have definite
proof.  Cookie cutters can be used to make fish sandwiches.  My daughter
and her husband own a restaurant in that area.
