The number of fields is a tradeoff between the memory available and the flexibility of the system.  The more fields you have, the easier it is to search for particular information, and the more data you can record.  However, it also increasingly ties up memory.  It also depends on the database program.  Often, it is difficult to add fields once a database is established.
