To tie this to mollusks, there are several good examples of evolutionary
transitions in the Mollusca, as might be expected from a group with such a
good fossil record.
An article on the decision may clarify things a bit.

The decision is to no longer require evolution as part of the biology
curriculum rather than to require it not be taught.  Still, it reflects
scientific and theological ignorance, and a much better statement was
rejected in favor of this one.
