What you may find useful is:
T'SOU, B.K. Distribution of varieties of Chinese n the Greater Pacific area,
which is a larger than A3 map (scale about 250 km to 1 inch), bound within a
similar publication published by the Australian National University.
Stephan Wurm published a whole series of very large working papers/monographs
on languages - write to the Deparment of Anthropology for a catalogue.
I only have the map (on my wall for several years) not the book. The date is
about 1988 or so.

Another possible source of information on
language maps of China (scale 1:12 mill., so
not quite the scale you want!) - maps
showing ethnic groups on pp.26-39 of The
Population Atlas of China. Hong Kong, OUP,
1987.
