For most dissection work I use a type of scalpel which has a permanent
metal handle, onto which snap disposable blades.  The blades are
available in a variety of sizes and shapes for different kinds of
work.  The No. 11 and No. 12 blades both taper to a very slender,
sharp point, and are useful for fine work.  The #11 blade is
straight, the #12 blade is curved.  Together with fine forceps, a
good dissecting microscope, and a steady hand, you can do pretty
delicate work with these.
