Andrew,
One thing your researchers should keep in mind is the so-called "Coastline
Paradox" (Google it), which can mean, among other things, that if the
numbers you find weren't derived/calculated using the same process (and
scale of measurement tool), you'll end up with numbers that can't be
fairly compared (assuming that's part of the plan).

I don't imagine this would be a problem for, say, the prairie provinces,
but for the rest (esp. Nunavut and NWT), and for any Mexican state whose
boundary isn't composed largely of straight lines, this could make for an
awfully big fly in the ointment.

Anyway, I'll look for numbers. Nothing useful from NRCan?
