Call (in the US) 1-800-USA-MAPS.  They will send you order forms.
Maps of Mars and the Moon fall in the Miscellaneous
Investigations Series.  They also have a glossy brochure called
"Planetary Maps" which describes the types of mapping that have
been done for the various planets other than Earth.  I'm pretty
sure that is free.
 
You will probably need an index map of some sort to locate which
sheets you wish to order.  An index for Mars passed through my
hands not long ago but I don't have easy access to the number at
the moment...
